The Story

Bonsai Smokehouse was founded by Chef Jair Gudiño Chávez and his wife, Mariana Niño, in Tulum, Quintana Roo. The idea was simple, not narrow: one product, cured and cold-smoked properly, sold without ceremony.

The reference point is Japanese, not decorative — the same discipline that governs a kaiseki kitchen or a tea room: nothing on the plate that wasn't earned, nothing in the room that isn't intentional. A moon gate marks the entrance in Tulum. Inside, a zen garden, and a smoker that runs slow.
